Ooops… I had my Honduran meal over 5 months ago but completely forgot to write it up. It’s been a busy few months but I DO remember this being really tasty and I out it on my ‘would make again’ list.

Honduran food is a mixture of African, Spanish, Caribbean and, of course, that of the indigenous people. I made a Baleada for breakfast; it’s a flour tortilla folded in half and filled with a variety of tasty things! They usually include fried beans but I really don’t like beans. I read about traditional ingredients and added cheese, sour cream, onion, scrambled egg and egg – the perfect weekend breakfast!
