In my head, Dominica and Dominican Republic were one and the same, but after a little digging I found out Dominica is further east and is a much smaller country. Unless I’m muddled, food from Dominica and Dominican Republic is referred to as Dominican (just pronounced differently) which made research more tricky.


I saw a recipe for Reef Chicken and thought it sounded amazing; I was right! I used chicken thighs and marinaded them in rum, brown sugar, lime juice, cinnamon, ginger, garlic and cloves. The chicken was baked and then coated with mango chutney and finished off in the oven. It was absolutely delicious and definitely one to make again and again.
